Recipe Monday


I've been following Jemma's Recipe Monday posts over at Amityville Boronia for the last few weeks so I thought I'd join in today.

I saw this recipe for Pumpkin Risotto on Masterchef Friday night so I thought I'd try it. This is my version using the ingredients that I already had in the fridge and the pantry - their version used Goats Cheese and Fresh Parmesan.

My version serves 2-3 people

Ingredients:
2 cups raw pumpkin - grated or chopped into small pieces
1.5 cups arborio rice
500mL chicken stock
1 small brown onion - chopped
1 teaspoon minced garlic
butter
olive oil

Method:
Place the pumpkin into a small saucepan with one teaspoon of butter and a couple of tablespoons of water. Place a lid on the saucepan and steam on a low heat until cooked.

Place the chicken stock in a saucepan and heat until simmering.

In a large saucepan, place a tablespoon of butter and a good splash of olive oil and heat.
Add the garlic and onion and saute until the onion is translucent.
Add the rice and coat in the butter / oil mix.
Add ladles of chicken stock one at a time and wait until absorbed by the rice.
If you run out of chicken stock, and the rice still isn't cooked through, you can substitute a few ladles of boiling water.

The pumpkin and the rice should be ready at approximately the same time. Mash the pumpkin and add to the risotto and stir through.

If you have fresh parmesan, grate a few tablespoons and stir them through. I only had the powdered version which really doesn't do justice to such a lovely dish.

Masterchef is inspiring me too. I often make pumpkin risotto, but after watching the way they did it, I am going to try it a different way!

I'm not a huge fan of pumpkin unless it's baked, but this looked really nice on Friday night (and in your post!!).

I normally stir the rice to stop it sticking, but there were just agitating it, which was rather wierd, but I'll have to try it sometime.

OOOO I saw this on Masterchef and wanted to try it - thanks heaps for posting about it - and their Ricotta pankcakes on Friday night looks delicious too..

That's so funny - I had already planned to make roasted pumpkin risotto for dinner tonight (actually it was meant to be last night, but we settled for something tinned on toast!)I do the cheats risotto - in the microwave. You must not stir until the end!

i can't get enough of m.chef. our whole family routine revolves around me being seated in cosy corner by 7pm sharp and they all know not to speak outside of ad breaks. or else!

mmmm that looks so good! I love risotto, such comfort food.
We were watching master chef too and my beloved made me the ricotta hotcakes with carmalised apples and cream for breakfast Saturday morning. i had to wait about 3 hours for it, bless him, but man was it worth it!!!

Looks delicious! I also add fresh spinach leaves and fetta to mine. Mix in at the end, then pop the lid on for a couple of minutes til the spinach wilts and fetta heats through.

You little ripper! Nothing more detestable than composing a weekly (yawn) meal (snore) plan - which is the key to sanity in this family. You just sorted tomorrow's dinner.

Yummy! My fave dish of all time is vegetable risotto. I might give this one a whirl tonight and let you know if it was popular with the troops.

this looks yummy, I will have to try it! I made mushroom risotto last night. I use oyster mushrooms because they don't turn the risotto black and they make it taste very yummy too! Then I pan fry some other darker mushrooms and put them on top for garnish. Top with parmesan.

Yum! I made this tonight for our lunch tomorrow and had a nice big handful of some fresh parmesan with cracked pepper that I had in the fridge. I think I've eaten 1/4 of it just taste testing at the end!

Your masterchef inspired risotto was a resounding success at our house on Tuesday night! Thanks for the recipe. We've had a lonely butternut pumpkin sitting in the fruit bowl for over a week and I finally put it to good use, along with some fresh parmesan and cracked black pepper to taste. Yum! Even the four yo and the non-risotto eating hubby loved it...
