Sunday Supper - 15 Minute Tuna Pasta


I'm joining in for Sunday Supper hosted by the always lovely Pip over at Meet Me at Mikes...

On tonights menu is one of my favourite "cook it up in a jiffy faster than a takeaway and fairly healthy too" suppers.

Ingredients:

2 cloves garlic (chopped) or 2 teaspoons minced garlic
1 onion (chopped)
1 tin tuna in springwater (425g)
1 tin diced tomatoes (400g)
1 jar tomato based pasta sauce (500g) - use any brand you like eg. Dolmio, Raguletto etc.
1 teaspoon of sugar (optional)
Your favourite type of pasta of gnocchi

Method

Put a large pot of water on to boil for the pasta or gnocchi, and cook as directed.
In a large saucepan, saute the garlic and onion in a little olive oil and butter until softened.
Add the entire tin of tuna (including the springwater) and stir until simmering.
Add the tin of chopped tomatoes and the jar of pasta sauce.
Simmer for five minutes.
Taste the sauce. If it is too acidic (from the tomatoes) then add 1 teaspoon of sugar.
Serve over your favourite pasta.

This sauce can also be used to make tuna lasagne.

Pretty glad, I headed on over to your blog, as I was just wondering what I could do for dinner with a tin of tuna. I think I have all those things in the house except for the onion and garlic, so I'm going to cheat and use the powdered stuff. Tuna lasagne - yummo!
